Why don't joist hangers attach to wood first then hang, i cant seem to hold all in one place and bang a nail?

Because if the timbers are not all the same dimensions and you put the hanger up first you have the bottom of the joist in a level plane where they sit in the hanger and not the top.

Some joist might be an 1/8'; less as wide, than the rest and some could be a 1/4';.Why don't joist hangers attach to wood first then hang, i cant seem to hold all in one place and bang a nail?
First, cut the end off for a template of one of the longest joists. Then hang all your hangers, by only putting one nail at the top in each half only , and let the hanger , hang. Then, you can bend the bottom of the hanger around to give you a snug fit with a hammer if nec. for each joist. Then as soon as it is perfectly level to the carrior beam, nail in the other side. Be sure to fill all the nail holes in each hanger on each side, and you should be using teco nails which are short 16d's and designed for this job. Same nails for your h25 hurricane ties. Good luck. Why don't joist hangers attach to wood first then hang, i cant seem to hold all in one place and bang a nail?
If you try to put the hanger on the joist first, you will find it very difficult to keep the joist flush with the rim. First of all, cut your joists so that they are a snug fit and hold themselves in place. Use a straight edge across the rim onto the joist to make sure the top of the joist is flush with the rim then install the hanger. Put your hanger around the joist and tap the spike in to the rim on one side then making sure the hanger is tight on all three sides tap the spike on the opposite side of the hanger in to the rim, then nail it. If your joist is a little short and won't stay in place, toe nail an 8 penny nail through the top of the joist in to the rim to hold it while you install the hanger.
Get a helper or grow some more arms and hands.
Try sheetrock screws.
